INGREDIENTS

Vegetables

  • 1 ½ kgcabbage, shredded
  • 1 carrot,grated or finely shredded

Marinade

  • 1 cupvegetable oil
  • ½ cupwater
  • ½ cupvinegar
  • 2 cupssugar
  • 2 tbspsalt

Spices

  • allspice, to taste
  • bay leaf, to taste
  • caraway seeds, to taste

INSTRUCTIONS

    Shred the cabbage and carrot

    Mix the cabbage and carrot together in a large bowl or jar

    In a saucepan, combine the vegetable oil, water, vinegar, sugar, salt, allspice, bay leaf, and caraway seeds

    Bring the marinade to a boil

    Pour the hot marinade over the cabbage and carrot

    Cover with a lid

    Leave at room temperature for about 1 hour

    Transfer to the refrigerator and chill before serving

NOTES

The handwritten recipe says to use 1 tablespoon salt, or slightly more. The line with water and vinegar is interpreted as 0.5 cup water and 0.5 cup vinegar. Serve cold. Store refrigerated in a covered jar or container.
