MARINATED CABBAGE
A crisp Eastern European marinated cabbage salad with carrot, vinegar, warm spices, and a sweet-tangy marinade

This marinated cabbage is a simple cold appetizer or side dish made with shredded cabbage and carrot covered in a hot sweet-and-tangy vinegar marinade. The cabbage softens slightly while staying crisp, with flavor from bay leaf, allspice, and caraway seeds. It is quick to prepare, rests briefly at room temperature, and is then chilled before serving.
